Over-Easy Eggs

Over easy takes the runny-yolk experience and gives it a flip. The whites get cooked on both sides while the center stays ready to spill across whatever else is on the plate. For plenty of breakfast people, that’s the sweet spot: less delicate than sunny-side up, much messier than scrambled, and exactly right when toast is nearby. Put over easy against sunny-side up and suddenly one little flip becomes a major philosophical disagreement. Put it against poached and you're choosing between diner comfort and brunch precision. If the yolk stays runny, over-easy voters are happy.
